A LONG day...

Get ready. This is going to be a long one!

Today has been an extremely long day. I feel like the only time I sat down was to eat a quick bite of lunch and drive from here to there. I woke up this morning and it was FREEZING... so I skipped running. I felt a little guilty, but snuggling up to my warm husband in our warm bed just sounded so much more appealing than the alternative. :)
You'll be happy to know that I changed up my Sunday oats this morning.
(I know you were worried about my food rut!)




I started out the same as usual with 1 cup of Sunday oats, 1/2 cup of vanilla soymilk, 1 spoon full of almond butter and 1/2 of a banana (here's where the change comes) then I added about 1/4 cup of canned pumpkin and acout 2 T of craisins. I sprinkled a little cinnamon and brown sugar on top and my breakfast was done. AND it was fabulous. I love food so eating yummy food is the ONLY way to go.
This day was a 'kick my butt' kind of day. Everything ran behind and I felt like I was never going to catch up and by the time lunch rolled around I was spent, but I still had a few hours left to go. I pushed through because of the awesome lunch I made. See...I love food!





My new favorite bread is (have I said this before?) Rudy's Organic Bakery 7 grain with flax. It is so soft and chewy and you can see the grains and it's a tiny bit sweet and it's just so good. I topped both slices with a tiny bit of light sour cream, romaine lettuce and sliced red onion (I was so mad when I realized I had forgotten my Muenster cheese!) and on top of that I put an oven baked Spicy Black Bean veggie burger. OMG! It was to die for...well, not really die, but it was good!
I didn't have any coffe this morning (GASP) so I HAD to throw in the diet pepsi. It was a must after the day I had...trust me and the honey crisp apple was a nice bit of sweet after such a spicy burger. I was satisfied after that was all gone. No question.
Once my work day was over I had to bribe Regan with a stroller ride and ANOTHER snack to get her to leave her classroom. I think she's fully adjusted now! Then we flew drove home, met Jason, I grabbed my snack...



buckled Regan into the stroller with her apple bar from Trader Joe's and off we went to pick Linsey up from school. THEN, we walked back home. Linsey had a snack and then did her homework. Jason went to class and I began making a go to dinner for a busy evening...





This soup is so creamy and filling and warming that you really don't need anything else with it, but if you live in the Sparks' house then a bowl of hot and steamy tomato soup is ALWAYS served along side...





I made sure that I got in a piece of Muenster cheese today one way or another.

And what dinner would be complete without a bite of something sweet after it? Not one that is eaten at my house for sure.



After opening the pantry door I came to a gruesome discovery!



It was so sad and so awful to see that I just couldn't stand there looking at it any longer. So...



I popped two little pieces of Bissinger's chocolate on top of it and and ate it. It was so yummy and I didn't feel the least bit guilty!
Then the girls and I got back into the car, drove to a friend's house, traded Regan for Linsey's friend (Olivia) and went to our monthly girl scout meeting. That lasted until 8pm! We had a small "party" for Juliette Low (the founder of girl scouts) played games from around the world and then called it a night. We swapped girls and headed home. Luckily Jason got home about the same time we did and he helped me put the girls to bed.
I still need to make lunches for tomorrow, but am putting it off for a little while. I want to make something different for lunch tomorrow, but am not quite sure what. I'll figure it out though. Don't worry about that.
I have some things working right now, but until they are finalized I can't talk about it. So, just know that things are happening and hopefully (if they work out) it'll be really great news!
I really do need to make lunches and go to bed. So that's what I'm going to do.

I told you this was going to be a long one! Good night...

Tomato soup and grilled cheese was my favorite lunch growing up! That really takes me back :)
