Hey there! How's your Friday? I'm glad it's Friday evening because I'm ready for a night of no cooking. Tonight's choice was Jason's and he picked chinese food. I'm not into those greasy, msg filled, dive chinese places, but there is a place not far from us that has GREAT chineses food. It's own by the same company that owns PF Changs and they are small and do mostly carry out (I think) but the food is clean and yummy!
But first - a quick recap of the day...
(quick because I have NEWS!)
Breakfast was yummy. It was the normal Sunday oats with 1/2 cup vanilla soymilk, a spoon full of almond butter, a few dried cherries, two spoons full of pumpkin butter and 1/2 apple chopped up.
Lunch was a REALLY FANTASTIC burger! I took all my usual sandwich fixin's minus the mayo and switched with light sour cream. I sliced the other half of my apple from breakfast along with thinly sliced red onion and then topped it with the Morningstar Farms Spicy Black Bean Burger. HELLO!!! It was to die for.
I had some red seedless grapes too.
Can you tell that I'm totally in love with this lunch?
Afterwards I had two of the sweet potato cookies from last night.
They are so good, but Jason told me that the girls wanted nothing to do with them this morning. No worries, more for me and I sure did have two more when we got home. :)
Now - my news!!
So, I was searching on craigslist a month or so ago for free lance writing jobs and didn't really see much. However, I did come across one that seemed like it might be something so I sent in a letter of interest. Nothing happened until a week or so ago. They asked me to write an article in my area of interest and they would review it for a position. Then I got THE email telling me that I was HIRED! I am now an official free lance writer for examiner.com St Louis. They don't pay much and not too many people have even heard of them, but it's a start. My official title is the St Louis Kids Nutrition & Exercise Examiner and my first article was published TODAY!!!
It's not a flashy or trendy type of article this time, but I wanted to present myself with my knowledge of nutrition to let people know that I know what I'm talking about. Then I'll start being more trndy and funny and intereting (not that the article isn't interesting). I really want to cover all different kinds of things regarding kids, nutrition and exercise so if anyone has any ideas feel free to throw them my way!
So that's my news...not HUGE, but definitely moving in the direction I want. I'm working on coming up with the money to take the course of my dreams! After 6 months I will be a Certified Nutritionist/Weight Management Consultant. I just have to come up with almost $900.00 to do it. Can you say "Tax Returns"? :)
Jason's on his way home (he had another long day) and I'm going to pick up the chinese food. Tonight's a veg at home with the girls night because we will be out all night tomorrow night at our fancy shmancy dinner. Don't worry - I'll take LOTS of pics.

Thanks Colleen! I was scared it would be boring, but i think it's important. I'm working on a few more right now. My goal is 3 a week so keep checking!
