The End of Daylight Savings

Halloween was a success and everyone had a great time!
I have to admit that I am loving the extra hour this morning. We have already gotten up, had coffee, had breakfast and everyone's getting ready for the day. It's great. :)

The oatmeal banana pancakes I made last weekend were such a hit that they were requested again this morning, but I decided to make them a little different today. In honor of Halloween...
(even though it was yesterday)



I made Pumpkin Oatmeal Pancakes!
The recipe is pretty much the same as last weekend, but I used 1/2 c canned pumpkin in place of the banana and I used 1 1/2 c light vanilla soymilk in place of the buttermilk. I also sprinkled in a little bit of cinnamon and they tasted amazing. Jason devoured his and the girls ate them up. You really didn't even need syrup (of course the girls still wanted it!) so I'm pleased with the outcome.

Now Jason is off to do the laundry and the girls and I are venturing out to the store for a few groceries for the week.

My roommate would absolutely die for those pancakes and so I'm going to have to try to make them!!!

They were soooo good! I'm actually bringing 2 leftover ones for breakfast at work tomorrow!
